General Tso's Chicken was one of my favorite college days late night Chinese food delivery orders. The spicier, zestier less popular cousin to the ever popular Orange Chicken, General Tso's Chicken is a fantastic option when you're looking to change up your Chinese food routine. Okay, so in my humble opinion, when ordering General Tso Chicken, Sesame Chicken or Orange Chicken from a Chinese restaurant, the base sauce reicpe is the same, they simply add spice to the General Tso, sesame seeds to the Sesame Chicken, and orange peel (with a little spice) to the Orange Chicken. It's sweet, savory, sour and every bit as addictive as the restaurant version.
Steps to make General Tso's Chicken:
- Prepare all ingredients. Cut the chicken itu bite size, and then in a mixing bowl mix with cornstarch and white pepper. Marinade for minimum 30 minutes (I did it overnight).
- Meanwhile, prepare the sauce. Mix altogether in a bowl. Then add a beaten egg and all purpose flour to the marinated chicken.
- Heat the pan, put some cooking oil, and fry the chicken until it is golden brown and cooked.
- Heat some oil again, now sauteé the dried chillies and onion. Next, put the sauce in, and mixed with the leftover batter (egg and flour) until it's thickened. Last, put the chicken in and let the sauce cover all the chicken's surface.
- Garnish with sesame seeds and spring onion. Serve with hot white rice.
The chicken is crispy without being overly breaded (my usual complaint when it comes to General Tso's), while the sauce is thick and syrupy, just like it should be. If pieces of chicken stick together, break apart with spatula. General Tso's chicken is a sweet, deep-fried chicken dish that is served in North American Chinese restaurants. This healthier lightened up version is wok sautéed instead of deep fried, and made without all the added sugar used in most restaurants. This is even better than the BEST I have had in my fave Chinese restaurant.
